Lebensmittelkontamination durch Mykotoxine: eine Übersicht

Mycotoxins can cause adverse health effects in humans and animals. Therefore, it is important to control their presence in foods and feeds. For the following mycotoxins: aflatoxins, ochratoxins, fusarium toxins (trichothecenes, zearalenone, fumonisins), patulin, and ergot alkaloids, up-to-date information concerning the occurrence, toxicological aspects, legal regulations, and analytical methods has been reviewed. The current situation of the mycotoxin contamination and monitoring in Switzerland is discussed.Downloads
