Enzymatische Oxydation von Vanillin

Vanillin was oxidised by peroxidase/H2O2 - The yields of divanillin, methoxyhydroquinone and unreacted vanillin were determined. Quantitative yield of divanillin was achieved when the molar ratio of H2O2/vanillin equaled 0.75. For the activity of peroxidase a very low pH-optimum of pH 4.25 was found. The HMO-spin densities of the vanillinphenoxy radical were calculated.
