Abstract

A soluble enzyme preparation from homogenized carrots (Daucus carota L.) catalyzes the formation of acylated steryl 14C-glucoside from steryl 14C-glucoside when either mono- or digalactosyl diglyceride is supplied as acyl donor. The soluble enzyme from carrots is suggested to be dilferent from the one found in green leaves by Heinz, which catalyzes the formation of acylgalactosyl diglyceride from monogalactosyl diglyceride.
